Ingredients

  • 8 oz tempeh, cubed
  • 3 cups cooked brown rice, chilled at least a few hours
  • 2 tbsp extra-virgin olive oil, divided
  • 2 cups broccoli, cut into florets
  • 1 carrot, sliced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp low-sodium tamari or soy sauce
  • 2 tbsp hemp seeds

Steps

  1. Brown the tempeh in 1 tbsp oil, 5-6 minutes. Set aside.
  2. Stir-fry broccoli and carrot in remaining oil, 3-4 minutes.
  3. Add garlic and ginger, cook 30 seconds.
  4. Return tempeh to the pan with tamari, toss and heat through.
  5. Serve over the chilled rice, topped with hemp seeds.
