Approximately 70 percent of traditional Okinawan calories came from purple sweet potato. Miso soup and seaweed appeared daily. Bitter melon was a near-daily vegetable. Breakfast: Miso Soup with Wakame and Tofu

Miso Soup with Wakame and Tofu

The daily anchor of the Okinawan gut-ECS axis, unpasteurized miso and wakame in a simple kombu-and-bonito dashi. Simple enough to make every day, which is the point.

Ingredients

  • 4 cups water
  • 1 oz kombu (dried kelp)
  • 1 cup bonito flakes (katsuobushi)
  • 4 tbsp unpasteurized miso paste
  • 2 tbsp dried wakame
  • 8 oz silken tofu, cubed
  • 2 green onions, thinly sliced

Steps

  1. Combine the water and kombu in a pot and let soak 20 minutes. Warm gently, removing the kombu just before it simmers.
  2. Add the bonito flakes, steep 2 minutes, then strain. This is your dashi.
  3. Soak the wakame in water for 5 minutes until soft, then drain.
  4. Return the dashi to low heat. Add the tofu and wakame, and warm through without boiling.
  5. Remove from heat. Whisk the miso with a little hot dashi in a small bowl until smooth, then stir back into the pot, this keeps the live cultures intact.
  6. Garnish with green onion and serve immediately.

Ingredients

  • 4 purple sweet potatoes
  • 1 tbsp sesame oil
  • 1 tsp sea salt

Steps

  1. Scrub the sweet potatoes clean, then pierce each a few times with a fork. Preheat oven to 400°F (200°C).
  2. Roast directly on the oven rack for 45-55 minutes, until a knife slides in with no resistance.
  3. Rest 5 minutes, then split open lengthwise.
  4. Drizzle with sesame oil and sprinkle with salt. That's genuinely it.
Substrate Priority: Stabilize Carbohydrates

Purple sweet potato's complex carbohydrate produces a much slower blood sugar response than refined grains, which matters because cortisol from glucose spikes suppresses CB1 receptor density over time. Ingredients

  • 1 bitter melon (goya), seeded and thinly sliced
  • 1 tsp sea salt, for salting the bitter melon
  • 14 oz firm tofu, pressed and cubed
  • 6 oz pork belly, thinly sliced
  • 2 large eggs, beaten
  • 1 tbsp sesame oil
  • 1 tbsp naturally brewed soy sauce
  • 2 tbsp bonito flakes, for garnish

Steps

  1. Salt the sliced bitter melon and let sit 10 minutes, then rinse and pat dry.
  2. Heat sesame oil in a wide pan over medium-high heat. Fry the tofu until golden on a couple sides, then set aside.
  3. In the same pan, cook the pork until browned and mostly crisp at the edges.
  4. Return the tofu to the pan with the bitter melon. Stir-fry 2-3 minutes until just tender. Season with soy sauce.
  5. Push everything to one side, pour in the egg, and let it set slightly before folding through. Remove from heat while still a little soft.
  6. Garnish with bonito flakes and serve immediately, ideally over a small portion of rice.
Substrate Priority: Add Polyphenol Diversity

Bitter melon's PPAR-alpha/gamma activity is the same mechanism omega-3s use to support insulin sensitivity. This dish also touches the membrane-building priority through the tofu, a low-omega-6 protein source.
